Sweden is a large country by European standards, with twenty-five provinces, similar to states or counties in the United States. Each province is unique in its history and character, and each has its own culinary specialties.
Recently, there has been a revival of interest in husmanskost, or “Good old down-home traditional Swedish cooking.” Most of the recipes in this book fall into that category.
